Crepes Suzette
Ingredients:
Crepes:
1 egg
75 ml flour
f.g. salt
2 ml sugar
125 ml milk (50 ml milk powder, add 75 ml water)
Sauce:
125 ml sugar
125 ml orange juice
15 ml grated orange rind
125 ml margarine
Method:
Better:
1. Beat egg well using a wisk. Add sugar.
2. Sift flour with salt and then mix in milk.
3. Combine wet to dry, carefully. Batter should be smooth and creamy.
4. Preheat pan and brush with margarine.
5. When butter is hot and bubbleing but not brwon, remobe pan from element and add 50 ml batter. Simulataneously tilt and rotate pan.
6. Quickly return to heat. Let brown (about 1 min.).
7. Using a knife, check for browing. Rotate pan and loosen crepe. Flip! (Can you do it without a flipper?)
8. Stack a plate. (If frezzing, stack between sheets of waxed papper and bag, air tight.
Filling :
1. Soften margarine in the microwave.
2. Grate orange rind and stir all the ingredients.
Building Crepes:
1. Gently roll crepe into a small roll. Place on a plate.
2. Drizzle with sauce.
3. Use a sieve to dust with icing sugar. |
