Double Cheese Quiche
Servings: 6
Ingredients:
2 tablespoons dry bread crumbs
1/2 cup shredded Cheddar cheese
1/4 cup buttermilk baking mix
1/8 teaspoon pepper
1 1/3 cups half and half
1/2 cup shredded swiss cheese
2 tablespoons finely chopped green pepper
3/4 teaspoon salt
5 eggs
Method:
1. Butter bottom of 8 or 9 inch quiche dish. Coat with crumbs.
2. Sprinkle Swiss and Cheeddar cheese in dish.
3. In 2 qt. Casserole combine onion and green pepper.
Microwave at High 2 to 4 minutes, or until tender, stirring 2 or 3 times.
4. Stir in baking mix, salt and pepper until vegetable are coated.
5. Beat in eggs and half and half. Reduce power to 50% (medium). Microwave 5 to 8 minutes, or until very hot but not set, stirring with wire whip every 2 minutes.
6. Stir; pour into dish. Microwave at 50% (medium) 8 to 12 minutes, or until knife inserted halfway between center and edge comes out clean and quiche is almost set, rotating dish 1/4 turn every 3 to 4 minutes.
7. Let stand 10 minutes before cutting.
Advance Preparation:
1. Cover and refrigerate microwaved quiche not longer than 8 hours or overnight.
2. Microwave at 50% (medium) 10 to 15 minutes, or until heated. |
