Puffy Omelett
Ingredients:
4 large eggs
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/4 teaspoon baking powder
1 tablespoon butter or margarine
Filling:
ONe or more of othe following:
Shredded cheese; crumbled crisp bacon; sliced cooked mushrooms; chopped ham; chopped green pepepr; chopped green onion; sauteed onion slices; chopped tomato; diced, cooked potato; shredded chipped beef; chopped cooked shrimp.
Method:
1. Separate eggs, placing whites in 1 qt. mixing bowl and yolks in smaller bowl.
2. Beat whites until stiff but not dry. Blend together yolks, milk, salt, baking powder and pepper.
3. Fold yolk mixture into beaten egg whites gently, using rubber spatula.
4. Melt butter in 9 in. pie plate at High 30 to 45 seconds.
5. Pour in eggs. Microwave at 50% power 3 to 5 minutes until partially set.
6. Lift edges with spatula so uncooked portion spreads evenly. Microwave 2 1/2 to 4 1/2 minutes, until center is almost set.
7. Sprinkle desired filling over 1/2 of omelet. Lossen omelet with spatula and fold ihn half.
8. Gently slide onto serving plate. |
