Rhubarb

Yield: 2

Ingredients:
500 ml rhubarb, ends trimmed and cut into 1/2 inch pieces
150 ml water
90 ml sugar
1/2 inch slice fresh gingerrot

Method:
1. Put rhubarb in saucepan. Add 125 ml of the water and cook, covered, over medium heat for 4-5 minutes, just until the rhubarb is barely tender. (watch carefully so it doesn't turn to mush)
2. Carefully remove rhubarb from pan and set aside; discard water.
3. Put sugar, remaining water and gingerroot into saucepan and heat 1-2 minutes, stirring constantly until sugar dissolves.
4. Add rhubarb, stir gently so the rhubarbis covered with syrup, cook 1 minute and remove form heat.
5. Let cool. Remove gingerroot.
6. Serve as for applesauce.
