Rough and Ready Potatoes

In UNDER 10 minutes you can have a batch of dark brown Rough and Ready potatoes so delicious that you will want ot make them every time you fry an egg.

Ingredients:
1 large russet
15 ml bacon fat or shortening
salt and pepper to taste

Method:
1. Scrub potato well and leave skin on. Cut potato inot cubes about 1/2 inch (1.3 cm) square.
2. Melt fat in skillet. When fat is very hot, stand back and add potatoes. Salt and pepepr liberally.
3. Let potato cubes fry about 4 minutes, turn them over and salt and pepper again.
4. Cook potatoes another 3 minutes or until they are dark and brown.
5. Serve hot.
