Spanish Scramble Eggs

Servings: 2 to 3

Ingredients:
1/2 cup chopped green pepper
1/4 teaspoon pepper
1 tablespoon buter ro margarine
1/4 teaspoon oregano leaves
6 beaten eggs
2 tablespoons milk
1/2 teaspoon salt
1/2 cup shredded Mozzarella ro 1/4 cup grated Parmesan
1/2 cup finely chopped, peeled, seeded tomato

Method:
1. In 1 quart casserole, combine green pepper and butter.
2. Microwave covsered at High 1 1/2 to 2 1/2 minutes, or until butter is melted and green pepper is hot.
3. Insmall bowl, blend eggs, milk, salt, peper and oregano. Mix into green pepper.
4. Microwave 3 1/2 to 5 minutes, or until eggs are soft and moist, stirring and pushing coooked portions to center after 2 minutes, 1 minute, then every 30 seconds.
5. Stir in tomatoes. Cover. Let stand covered 1 minute.
6. If desired, sprinkle on, or stir in cheese and allow to stand covered 1 to 2 more minutes.
