Tortilla Breakfast Cups
Yield: 2
Ingredients:
vegetable oil
2 6 in. flour tortillas
30 ml finely chopped red pepper
30 ml finely chopped green pepper
5 ml chopped fresh coriander or parsley
2 eggs
salt and pepper
50 ml Cheddar or Monterey Jack cheese
Method:
1. Preheat oven to 375oF.
2. Brush ramekins with oil. Place on cookie sheet.
3. Place tortilla into each dish.
4. In a small bowl, stir together red pepper, green pepper and coriander or parsley.
5. Divide mixture evenly into shells.
6. Break each egg into a small bowl.
7. Place whole or scrambled egg into each cup.
8. Top with cheese and salsa. Put salsa then cheese.
9. Bake for 20 min. or until egg is firm. |
