Denver Sandwiches

Servings: 4

INgredients:
3 tablespoons chopped green pepper
2 tablespoons chopped onion
2 teaspoons butter or margarine
3 eggs
1/2 cup fully cooked chopped ham
1 tablespoon milk
1/8 teaspoon dry mustard
1/8 teaspoon salt
1/8 teaspoon pepper
bread or toast

Method:
1. COmbine green pepper, onion and butter in small mixing bowl.
2. Microwave at High 1 to 2 1/2 minutes, or until vegetables are tender.
3. Stir in eggs, chopped ham, milk and seasoning. Pour into tow small saucers
. 4. Microwave at High 2 to 5 minutes, or until eggs are almost set, pshing cooked portions toward center of dish and rotating saucers once or twice during cooking.

Note: You can serve open face or as sandwiches with bread or toast.
