Easter Cookies

Ingredients:
60 ml sugar
30 ml water
30 ml light corn syrup
50 ml cocoa
2 ml cinnamon
60 ml margarine
250 ml flour
1 ml baking soda

Method:
1. Preheat oven to 375oF.
2. In a small saucepan, bring to a boil, sugar, water, corn syrup, cocoa and cinnamon.
3. Place margarine in a large bowl. Pour in liquid mixture and stir until margarine melts.
4. Cool.
5. Stir in flour mixture and mix well with a wooden spoon.
6. With a floured rolling pin and floured surface, roll dough to a 1/8 inch thickness.
7. Cut out Easter bunny shapes, place on an ungreased cookie sheet. Bake for 20 min. or until firm to the touch.
8. Cool on cooling rack.
9. Decorate with icing sugar.
