
1 pie crust
-- baked and cooled
Filling:
1/2 envelope unflavored gelatin
1/4 cup lemon juice
1/8 cup water
1/2 teaspoon lemon peel -- grated
4 ounces cream cheese
1/2 cup powdered sugar
1 cups whipped cream -- whipped
Method:
1)Combine
gelatin, lemon juice and water, Stir over medium heat until dissolved. Stir in
peel .
2)Combine
cream cheese and sugar until smooth, add to gelatin mixture. Refrigerate 15
minutes until thick.
3)Fold in
whipped cream, spoon into pie crust. Refrigerate until firm.
