Sour Cream Scones

what you'll need:

  • 1/2 cup sugar
  • 3 tablespoon butter
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cups of all-purpose flour
  • 1 1/2 teaspoon baking soda
  • 1/3 cup sour cream - low fat or 2%
  • 1/2 cup blueberries
  • 1 teaspoon of orange zest

what you'll do:

  1. mix sugar, butter, egg and vnilla together until crumbly
  2. add flour and baking powder to batter
  3. stir in sour cream until smooth
  4. stir in blueberries and zest
  5. line cookie sheet with greased aluminium foil, then drop batter by tablespoonfuls, placing them about 2-3 fingers apart
  6. Bake in oven preheated to 400F for 15 minutes (or until edges brown)

Variations:

  • instead of blueberries and orange zest, stir in 1/2 cup raisins with 2 teaspoon of cinnamon and a dash of brown sugar
