CHILLI BEEF
Ingredients 4 - 6 teaspns vegetable oil 1 - 2 cloves garlic finely chopped 3 fresh chillies chopped 2 teaspns fish sauce 2 teaspns oyster sauce Salt 6 - 8 tablespns water 2 chopped shallots 2 tablespns fresh basil 500g lean beef sliced in to thin strips Method In a wok heat the oil and stir fry the garlic until golden Then add the chilli and cook for 1 minute more Add beef, fish and oyster sauce, water and salt Simmer and cook for a few minutes till beef is tender Stir in shallots and basil, stir fry for 30 seconds and serve with either rice or noodles and stir fried vegetables Serves 4 Crazychef says "Add as many chillies to this as you can, also add any other favourite chinese ingredients such as water chestnuts or bamboo shoots".
