BLACK PAN CHILLI RECIPE

Hi as a new member i thought i would add my recipe for chile. It came from a few months of trying various recipe's and taking what i liked best from each one, so it is in no way original. INGREDIENTS> 500 Grams Pork/Beef cubed with fat trimmed off 2 Large Onions, chopped8 Cloves Garlic, chopped2 Habanero Chiles, chopped fine1 Tablespoon Cumin 3 Tablespoons New Mex Red Chile Powder 1 Tablespoon Chipotle Powder 1 Tablespoon Oregano, mexican is best 1/2 Tablespoon Epazote (optional) 1/3 Cup Wholemeal Flour 2 Pints Chicken Stock, not too strong or it will be salty when reduced 3 Tablespoons Tomato Puree2 1/2 Cups Black Turtle Beans, cooked. METHOD Fry onions, garlic and habaneros in oil until starting to brown. Add the pork/Beef and cook until it is sealed. Put all the spices and herbs into mixture and cook for a few minutes, take care it does not catch. Add the tomato puree, half of the stock and stir in the flour. Pour in the rest of the stock cover and cook on a low heat, stirring frequently, for at least three hours till meat is done and the sauce goes a very dark brown. Half an hour before it is cooked add the black beans. Serve it up in a bowl with cornbread.
