DILL CHICKEN WITH CHILLI PEPPERS
Ingredients 1 onion chopped 2 oz butter 1 4 - 5lb chicken cut up into 8 pieces 1/2 pint chicken stock 2 - 3 tablespns dijon mustard 2 tablespns chopped dill 2 chopped fresh chillies Seasoned flour Method Melt the butter and add the onion, cook till pale golden Toss the jointed chicken in the seasoned flour and add to onion Turn the chicken over and cook evenly till golden on all sides Heat the chicken stock up and add to the chicken Stir in mustard, add the chillies and season with salt and pepper Simmer chicken for futhur 30-40 mins till fully cooked Lift out the chicken and place in serving dish To liquid add the dill, stir and pour over chicken Serve immediately with new potatoes and snap peas Serves 4
