PEPESAN
Ingredients 8 mackerel fillets (fresh or smoked) 1 large onion finely chopped 2 teaspns garlic 1 fresh chilli chopped 1 teaspn lemon grass Juice of half a lemon Juice of half a lime Salt 2 sprigs flat leaved parsley 2 teaspns chilli sauce Method Clean mackerel fillets, rub with salt and lemon juice and then rinse off Mix the remaining ingredients together Place the fillets in foil and cover with mix Roast in oven for approx ½ hour Open foil and roast for furthur 10 mins Serve immediately with boiled rice Serves 4
