CHILLI SCALLOPS
Ingredients 250g fresh scallops 4 tablespns red curry paste 2 tablespns of oil 2 cloves garlic finely chopped 2 - 4 fresh red chillies sliced 2 tablespns fish sauce 1 - 2 tablespns sugar 5 - 6 tablespns chopped fresh basil Juice of 1 lime Method Combine scallops with curry paste, lime juice and marinate for 2 hours In wok heat oil and fry garlic until golden Then add scallops, red curry paste and chillies, stir fry for 2 minutes Add fish sauce and sugar, cook for 1 minute longer When scallops are cooked stir through basil and remove from heat and serve with rice. Serves 2 - 4
