CAULIFLOWER CHEESE SOUP

Place everything, except cheese, milk and the cauliflower set aside, into a stock pot. Bring to a boil and simmer until all veggies are very tender. Puree all of it in a blender and return it to the pot. Keeping the pot off the heat, mix in the milk, cheese and the remaining cauliflower, minced fine. Heat to near simmer without boiling and serve.
