Chinese Braised Chicken |
3 lbs | Chicken drumsticks, wings and/or thighs |
1.5 Tbsp | Vegetable oil |
3 cloves | Garlic |
1 Tbsp | Ginger, fresh, sliced |
5 | Sichuan peppercorns |
2 | Anise segments |
3 | Chile peppers, dried, red |
1 tsp | Salt |
3/8 cup | Soy sauce, dark |
3 Tbsp | Sesame oil |
1 bunch | Scallions |
Heat a large skillet and add oil. |
As soon as oil gets runny, add pepper, anise, garlic, ginger, chile pepper and salt |
When garlic begins to scorch, add chicken. |
When bottom of chicken is browned, turn over each piece and reduce heat to low. |
Add soy sauce and sesame oil. |
Simmer on low heat 30 minutes. |
Flip pieces and simmer 30 minutes more. |
Serve hot or cold with garnish of chopped scallions. |
