Picnic Chicken
Chinese Braised Chicken

 

3 lbs Chicken drumsticks, wings and/or thighs
1.5 Tbsp Vegetable oil
3 cloves Garlic
1 Tbsp Ginger, fresh, sliced
5 Sichuan peppercorns
2 Anise segments
3 Chile peppers, dried, red
1 tsp Salt
3/8 cup Soy sauce, dark
3 Tbsp Sesame oil
1 bunch Scallions

 

Heat a large skillet and add oil.
As soon as oil gets runny, add pepper, anise, garlic, ginger, chile pepper and salt
When garlic begins to scorch, add chicken.
When bottom of chicken is browned, turn over each piece and reduce heat to low.
Add soy sauce and sesame oil.
Simmer on low heat 30 minutes.
Flip pieces and simmer 30 minutes more.
 
Serve hot or cold with garnish of chopped scallions.
