| Chinese Braised Chicken |
| 3 lbs | Chicken drumsticks, wings and/or thighs |
| 1.5 Tbsp | Vegetable oil |
| 3 cloves | Garlic |
| 1 Tbsp | Ginger, fresh, sliced |
| 5 | Sichuan peppercorns |
| 2 | Anise segments |
| 3 | Chile peppers, dried, red |
| 1 tsp | Salt |
| 3/8 cup | Soy sauce, dark |
| 3 Tbsp | Sesame oil |
| 1 bunch | Scallions |
| Heat a large skillet and add oil. |
| As soon as oil gets runny, add pepper, anise, garlic, ginger, chile pepper and salt |
| When garlic begins to scorch, add chicken. |
| When bottom of chicken is browned, turn over each piece and reduce heat to low. |
| Add soy sauce and sesame oil. |
| Simmer on low heat 30 minutes. |
| Flip pieces and simmer 30 minutes more. |
| Serve hot or cold with garnish of chopped scallions. |
