Creme Brulee


2 cups heavy cream
4 egg yolks
1/4 to 1/2 cup sugar
1-2 tsp vanilla

Preheat oven to 300F

Bring cream just to boil, then cool 15 minutes, covered.

Whisk egg yolks and sugar until light.
Gradually whisk in 1/2 cup cream.
Gradually add rest of cream and vanilla.

Pour into ramekins 1.5 inches deep
Place in boiling water halfway up ramekins
Back 25 to 30 minutes until barely set in center

Let stand in water bath 10 minutes
Transfer to wire rack to cool completely
Cover and refrigerate

Top with thin, even layer of sugar
Caramelize with blow torch
Return to refrigerator until caramel cools
