Aloo Gobi...
(cauliflower & potato curry)

ingredients:
1. Boiled & cubed potatoes- 2 big
2. Boiled cauliflower florets-1 medium
3. onions chopped - 2 big
4. Tomatoes chopped -2 medium
5. Tomato paste - 2tbsp
6. ginger-garlic-green chilly paste-1 tbsp
7. mint leaves-a few
8. coriander leaves-1/4 bunch
To grind: 9. cuminseeds-1/2 tsp
10. coriander seeds-1 tsp
11. aniseeds-1/4 tsp
12.cardamom-3
13.cinnamon-1''stick
14.cloves-3
15.pepper corns-5
16.cashewnuts-10
salt,turmeric powder,chilly powder & oil -as required
garnish: with coriander leaves
Cooking instruction:
Heat oil ,fry onions till brown .add ginger-garlic-green chilly paste.fry. then put in chopped tomatoes & tomato paste and fry again. then add coriander leaves and mint leaves, mix and keep
aside . let it cool.
Dry roast the ingr.for grinding and grind to a fine powder.Grind together onion-tomato gravy&tur,chilli pwd & cashewnuts..
Heat oil & add ground masala..fry ..add boiled potatoes & boiled
cauliflower pieces.add salt.Mix well ..cook till the potatoes &cauliflower blend well with the gravy. Garnish with coriander leaves..
