For
the dough: 5 tbsp. flour, 2 1/2 cups milk, 2 eggs, 1 tbsp.
sugar, 1/3 tsp. salt, 2 to 3 tbsp. vegetable oil
For the filling: 1 1/4 cups fresh cottage cheese, 2 tbsp.
sugar, 2 tbsp. sour cream, 2 egg yolks or 1 egg, salt to taste
For the frying: 1/2 cup butter.

b//n/s differ from their common instant variety by their shape. To prepare leaf-shaped
blinis, put
a filling on each piece, roll it into a cigarette-like tube and bake in butter
on a pan.
with a thread, grease it with egg, roll in bread crumbs and bake in boiling
oil. Discard the thread before serving.
