Chef's school
In this do-it-yourself age, people who enjoy fine food want to learn how to make it themselves. In the words of Virginia Marr, executive chef at The Pillar & Post Inn in Niagara-on-the-Lake, "The kitchen walls are breaking down. Customers want to take the cap off the mystery of what goes on in kitchens."
Whether one's culinary ambitions are fuelled by the chefs on Food Network, or just the simple desire to master a handful of classic dishes, taking cooking classes is the best way to learn all the techniques you see demonstrated on television every night. And what better place to learn than in the company of great chefs? Many cooking schools offer courses featuring Canada's | own celebrity chefs - people like Jamie Kennedy or Michael Olsen. And if you've enjoyed a meal at a favourite restaurant, what could be better than learning how to prepare it directly from the expert who created it?
When booking a class, remember to always ask if it's hands-on, or just a series of demonstrations. Oftentimes classes featuring famous chefs are more about being entertained and awed than about having a go yourself. Make the most of your experience by choosing a class that allows you to tie one on (an apron, we mean) and get involved alongside others.

But should a cooking class whet your appetite for more distant locales, try Vancouverite Margaret Cowan's Italian cooking school site. She'll arrange a holiday package at one of a number of beautiful Italian villas, where you can learn the fine art of Italian cooking in the heart of a distinct gastronomic region. Choose a favourite area, or have Margaret suggest one. Other Italian cooking holidays can be booked through Flavours (a highly-recommended British company) or through Umberto Menghi's own school at Villa Delia, in Tuscany. For those who aren't familiar with Menghi, he is one of Vancouver's most prominent restaurateurs, and a passionate chef in his own right. From the photos on the Web site, we think there's probably no nicer place to spend a week learning the ins and outs of Italian cookery.
