Chicken Tostados   IC Friendly
4 boneless, skinless chicken breasts-cubed
1 tbs. oil
4 garlic cloves-crushed
12 corn tostado shells
1 can fat free refried beans
1/2 tsp. garlic powder
1/4 tsp. cumin
lettuce-chopped
tomato-chopped
1 cup monzerella cheese
In skillet brown chicken breast cubes in oil and garlic. In
a seperate pan heat beans, garlic powder and cumin. Once chicken
is completely cooked, spread heated beans over each tostado shell
then add chicken and cheese. Bake in 350 degree oven until cheese
melts, add lettuce and tomato. Serve.
