Tofu and Vegetable Stir-Fry
Time for preparation: 10-20 minutes
Ingredients for 2-4 people:
1 Green pepper sliced,
1 Red pepper sliced,
1 yellow pepper sliced,
1 onion diced,
6 *Chinese dried mushroom (you can use normal mushrooms if you want) whole,
1 carrot sliced "julienne",
A floret of brocoli separated into pieces,
1 can of water chestnuts (a small can will do),
1 medium sized courette sliced "julienne",
Use whatever amount of tofu you want,
A couple of garlic cloves, not chopped but bruise it, it gives more flavour...,
Soy sauce,
Oyster sauce,
Black bean sauce.First heat a wok (or pan) with the oil until very hot, then add the option you have chosen tofu in my case.
Once the tofu or meat is cooked add the onions and garlic. Cook until golden brown.
Add the peppers and cook for about a min.
Now here is the fun part, add about 1/4 of water so that the tofu and veg do not burn. Stir in.
Add a couple of splashes of soy, oyster sauce and a little black bean ( not alot, its very rich but salty) Stir in........
Now add the mushrooms, then the rest of the veg. The last thing should be the water chestnuts and broccoli.
Stir in and cook between 5 -8 mins.
And its done. And a couple more splashes of soy to finish What you should have, is crispy veg (do not over cook the veg as the longer you cook the more vitamins you lose) and the tofu or meat should be tender and yet rich.
