1 1/2 cups all-purpose
flour
1 1/4 teasp. baking powder
1/2 tsp. baking
soda
1/2 tsp. ground cinnamon
1/8 tsp. salt
2 slightly beaten egg
whites
1 cup mashed bananas
3/4 cup sugar
1/4 cup cooking oil
Nonstick spray coating
In a medium mixing bowl
stir together the flour, baking powder,
baking soda, cinnamon
and salt. Set aside.
In a large bowl stir
together the egg whites, banana, sugar, and
oil. Add dry mixture
to banana mixture, stir till moistened.
Spray a 8x4x2-inch loaf
pan with nonstick coating. Spread in
prepared pan. Bake in
a 350 degree oven for 45 to 50 minutes
or until toothpick inserted
near the center comes out clean.
Cool bread in the pan
on wire rack for 10 minutes. Remove from
pan; cool completely
on rack. Wrap in foil or plastic wrap;
store overnight. Makes
1 loaf ( 16 servings )
