As you try to cook your old favorites, you will find that you can cook the same things by susbstituting
low-fat ingredients in place of the higher fat content ones. And still enjoy your favorite foods.
 

Meat Loaf

To make your meat loaf, use egg whites instead of whole eggs, along
with very lean ground beef. You could even replace half of the beef with
soy mixture ( available in most health foods stores ).
To keep the meat loaf moist, add chopped onions, celery, carrots,
mushrooms, green peppers or the whites of hard boiled eggs.
Bake in a perforated pan, and suspend the pan over a rack
so that the fat can drain off.
