Bacon Tomato Cups

I love serving these to company.  They are a great appetizer or snack.  

8 slices bacon cooked and crumbled (if you're in a hurry you can use Oscar Meyer real bacon in the can)

1 tomato, chopped

1/2 onion, chopped

3 ounces shredded swiss cheese or cheddar cheese

1/2 cup mayonnaise

1 tsp dried basil

1 (16 oz) can refrigerated buttermilk biscuits

Preheat oven to 375.  Lightly grease a mini muffin pan.  If you are using a non-stick pan, no need to grease. In medium bowl combine cooked/ crumbled bacon, tomato, onion, cheese, mayonnaise, and basil. 

Separate each biscuit into two separate pieces of dough. (I like to shape each half piece into a ball and flatten)  Press 1 half piece of dough in each muffin cup making sure to line entire cup.  Fill each biscuit cup with bacon mixture.  Bake for 10 to 12 minutes or until golden brown.
