Applesauce Spoon Doughnuts

3 tbsp. butter
3/4 cup sugar
3 eggs
1 cup applesauce
1 tsp. vanilla
4-1/2 cups flour
3-1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 cup milk
Oil for frying
additional sugar in bowl.

Heat oil in a large saucepan or in a deep fat fryer to 375.  Cream butter and sugar.  Add eggs and blend well.  Beat in applesauce and vanilla.  Combine flour, baking powder, salt, cinnamon and nutmeg; add to the moist mixture alternately with milk.  The batter will be very thick.

Drop teaspoonfuls of batter into the hot oil.  Turn and fry until golden, about 1 minute on each side.  Drain on paper towels; roll in sugar while warm.  Note:  Don't make the drops too much bigger than a tablespoon or they will not cook all the way through.

"Simply Wicked" French Bread (for your bread machine)

2 teaspoons of yeast
3 cups white bread flour
1 teaspoon salt
2 tablespoons butter (sweet is best)
1 cup less 1 tablespoon hot water
2 egg whites

Use all ingredients at room temperature.  Whip the whites until stiff and set aside.  Add ingredients in the order listed, except egg whites.  Start the bread machine.  When the ingredients are moist, dump the egg whites in. 

This is the best french bread I have ever tasted!  Makes a 1-1/2 pound loaf.

Whole Wheat Bread (for your bread machine)

2 teaspoons of yeast
2-1/2 cups whole wheat flour
1 cup white bread flour
1 tablespoon sugar
1 teaspoon salt
2 tablespoons butter (sweet is best)
3 tablespoons nonfat dry milk
1-1/2 cups warm water

Use all ingredients at room temperature and put the ingredients in the bread machine container in the order listed.  Start the bread machine.   Makes a 1-1/2 pound loaf.
