Rhubarb Pie

4 cups small diced rhubarb
1 cup sugar
2 tbsp. flour
2 eggs, slightly beaten
1 tbsp. lemon or orange juice
2  (9 inch) unbaked pie shells

Add sugar and flour to eggs.  Combine with rhubarb.  Add the lemon or orange juice.  Pour into unbaked pie shell.  Add top crust.  Preheat oven to 450, then turn down to 350 and bake for 40 minutes.

Apple Bars

2-1/2 cups flour
1 tsp. sugar
1/2 tsp. salt
1 cup shortening
1 egg yolk
crushed corn flakes
8 cups sliced apples, tart
1 cup sugar
1 tsp. cinnamon
butter
1 egg white

Powdered Sugar Icing:
1 cup powdered sugar
milk
1 tsp. vanilla

Mix flour, 1 tsp. sugar, salt and shortening like for pie crust.  Beat egg yolk in cup and add milk to make 2/3 cup.  Pour into flour mixture.  Roll out 1/2 of the dough to fit jelly roll plan.  Sprinkle with several handfuls of crushed corn flakes.  Spread apples over crust.  Sprinkle with 1 cup sugar and cinnamon.  Dot with butter and cover with remaining crust.  Beat egg white and spread over crust.  Bake at 375 for 45 minutes.  Drizzle with powdered sugar icing.

Strawberry Pie

6 cups fresh strawberries
1 c. sugar
1 Tbsp. butter
1/2 c. water
2 Tbsp. cornstarch
1  (9 inch) baked pie shells

Crush 2 cups berries.  Combine with water, sugar and cornstarch.  Cook until thick and clear.  Add butter and cool.  Put 4 cups whole strawberries in crust.  Pour thickened mixture over them and chill.  Serve with whipped cream.
