Chicken or Turkey Tetrazzini

1 (12 oz.) pkg spaghetti
1-1/2 tsp. vegetable oil
1/2 tsp. salt
1-1/2 tbsp. butter
1/4 cup chopped onion
garlic to suit your taste
2 cans condensed cream of mushroom soup
1 cup chicken broth
1 tsp. seasoning salt
3 cups shredded American cheese
4 cups diced, cooked chicken or turkey
2 tbsp. chopped parsley
2 tbsp. diced red bell pepper or pimento

Directions:

Preheat oven to 350.  Cook spaghetti according to package directions, add oil and salt to cooking water.  Drain.

In large saucepan over medium heat, melt butter.  Add onion and garlic.  Cook, stirring occasionally, 2 minutes.  Add soup, broth, season salt and 1-1/2 cups of the cheese.  Cook and stir until cheese melts and mixture is smooth.  Add spaghetti and chicken or turkey.  Mix well.  Transfer to 2-quart baking dish.  Cover with foil.

Bake at 350 for 30 minutes or until hot and bubbly.  Remove foil.  Sprinkle with remaining cheese.  Continue baking 2 minutes or until cheese melts.  Sprinkle with parlsey and bell pepper.

Boy Scout Casserole

1 can corn
1 can cream of mushroom soup
2 cans tomato soup
salt
pepper
1 lb. hamburger
egg noodles

Cook the noodles as per the directions on bag.  Fry the hamburger.  Add rest of ingredients to hamburger and then mix gently with the noodles.

Quicker Chicken and Dumplings

4 cups chicken broth
1/2 cup sliced celery
1/2 sliced carrots
1 bay leaf
1 teaspoon dried parsley flakes

Dumplings:
2 cups biscuit baking mix
1/4 teaspoon dried thyme
dash ground nutmeg
2/3 cup milk
1/2 teaspoon dried parsley flakes
3 cups cubed cooked chicken breast

In a 5-qt. kettle, combine broth, celery, carrots, bay leaf and parsley; bring to a boil.   For dumplings, combine biscuit mix, thyme and nutmeg; stir in milk and parsley just until moistened.  Drop by tablespoonfuls onto the boiling broth.  Cook, uncovered, for 10 minutes; cover and cook 10 minutes longer.  With a slotted spoon, remove dumplings to a serving dish; keep warm.  Bring broth to a boil.  Reduce heat; add chicken and heat through.  Remove bay leave.  Spoon over dumplings.  Yield:  4 servings.

Grilled Potatoes

6 medium baking potatoes, peeled and cut to 1-1/2" chunks
1/4 cup margarine or butter, melted
dash pepper
1 garlic clove, minced

Put all ingredients in tin foil and close up tightly.  Put on grill and cook until potatoes are tender.

Grilled Chicken Tenderloin

1 lb. chicken breast tenders
1/2 cup Italian dressing (drain and discard spices)
1 tsp. fresh lime juice
1-1/2 tsp. honey

Mix dressing, lime juice and honey together.  Pour over chicken tenders, making sure all are covered.  Marinate for 1 hour.  Braise tenders in a non-stick pan or grill until lightly golden in color, but not dry.
