There is nothing more special than homemade goodies, and yummy smells from your kitchen!

Baking is a passion of mine, It is something that I love to do and something that my family really enjoys!
It is a love that has been passed down to me from my great grandmother.
There is something about the surprise and delight when I create something new or an old favorite for my family!
It is also a love that I am passing down to my children, a gift that started from my great grandmother!

Pull up a chair and a cup of coffee... and enjoy!

Tomato and Cheese filled Focaccia

1 pkg. active dry yeast
3/4 cups warm water
2 cups flour
1/2 tsp. salt
6 tbs. olive oil
1 cup shredded provolone cheese
5 tbs. grated Parmesan cheese
1 1/2 tsp. Italian seasoning
1/8 tsp. pepper
2 lg. ripe tomatoes sliced thin

Dissolve yeast in warm water and let stand 5 minutes.
Using food processor: combine flour and salt. Stir in yeast mixture and 3 tbs. olive oil. Process ingredients until it forms a ball. Turn out lightly onto a lightly floured surface. Knead till smooth and elastic, about 2 minutes.
If mixing by hand, combine flour and salt in mixing bowl.  Stir in the yeast mixture until formed into a ball. Knead 10 minutes or until smooth and satiny.
After kneading, place dough in oiled bowl. Turn over to oil top. Cover and let rise until double in bulk. about 30 minutes. Punch down the dough and let rest for 5 minutes.
Preheat over to 425 deg. Oil a 10 inch cake pan, or deep dish pizza pan, or a spring form pan. Fit dough evenly in it. Brush top with 1 tbs. olive oil, cover and let rise 15 minutes. Bake dough 20 to 25 minutes. Cool completely.
Preheat oven to 350 deg. combine provolone, 1/4 cup parmesan, 1 tsp. Italian seasoning, and pepper.  Cut baked focaccia horizontally in half. place bottom on a cookie sheet. Cover with sliced tomatoes, sprinkle cheese mixture over top. c
Cover with other half of focaccia, brush top with remaining olive oil , and sprinkle with 1 tbs. parmesan cheese and 1 tsp. Italian seasonings.
bake 10 minutes or until cheese inside is melted.  Cut into wedges and serve immediately.
