Blintz Pancakes

1 cup all-purpose flour

1 TBSP sugar

1/2 tsp salt

1 cup (8oz) sour cream

1 cup (8oz) small-curd cottage cheese

4 eggs, lightly beaten

Strawberry or Blueberry syrup

Sliced fresh strawberries

 

   In a bowl, combine the flour, sugar and salt; mix well.  Add the sour cream, cottage cheese and eggs; mix until combined.  Spoon 1/4 cupfuls of batter onto greased hot griddle.  Turn when edges are set; cook until the second side is golden brown.  Serve with syrup and strawberries if desired.

Yield: 12 servings
