Rinci|ak's Tunisian Meat and Egg pie ( Brik ) 

Makes...8 pies 

9 eggs 
4 tbsp butter 
300 gm ground beef or lamb 
2 medium sized onions, finely chopped 
4 tbsp finely chopped fresh coriander leaves 
1 small red bellpepper, finely chopped 
Salt and pepper 
1/2 cup small pieces of feta cheese 
8 sheets of filo dough 
oil for frying 

Methods; 
1. Beat one of the eggs and set aside 
2. In frying pan, melt the butter,then saute the meat over medium heat for 6 minutes 
3. Stir in the onions, garlic,coriander leaves, hot bellpepper and salt & pepper,  
    Stir fry for further 10 minutes, then remove from the heat and stir in the cheese.  
    Set aside. 
4. Take a sheet of filo dough and fold twice to make a square, then place 50 gm  
    of the filling on the centre and make a well in the filling. 
5. Brush the edges of the square with some of the beaten egg,then break an egg  
    into the well and fold the edges over to form a triangle. 
6. Press the edges together to seal, in the process turning them a little to make  
    certain they are well sealed. 
7. In a frying pan, place cooking oil to about 1/2 inch deep and heat, then gently  
    slide the brik in and fry over medium heat, turning over once so that both sides  
    are golden brown. 
8. Continue the same process until all the briks are done, then serve immediately.
