Ketam Taucheo Puteh (Crab in Spicy
Soya Bean Sauce)
Ingredients:
1kg rock crab (ketam batu) - clean well and cut
into 2 after removing hard shell
Grind to a paste:
6 red chillies
10 chilli padi
6 shallots
2 cloves garlic
2 heaped tbsp salted soya beans (taucheo) - rinse
and drain
Ingredient for frying:
4 shallots - sliced
2 cloves garlic - chopped
2 stalks serai (lemon grass) - crush
3/4 cups water
2 level tsp sugar (or to taste)
3/4 tomatoes - cut into wedges
2 red chillies } slit

2 green chillies }
4-5 sprigs big coriander leaves (daun ketumbar
kasar)
- break into 1cm pcs for garnishing
4tbsp oil
Method:
Heat oil. Add ingredient for frying.
When onions are brown add ground ingredients
and mix well.
Put in crabs and coat with the spices.
Add sugar and 1/4 cup water from allowance.
When mixture gets dry, add the rest of the water
and keep stirring until crabs
are coated with the thick gravy.
Just before removing from heat, add the tomato
and chilli and mix.
Serve garnished with coriander leaves.
Note : Salt has been omitted as the taucheo is
very salty.
However adjust according to taste.
