Chick Pea Soup ( Leblabi )
1 1/2 cups chick peas, washed and soaked overnight
in
10 cups of water.
4 cloves garlic, crushed
1 hot bellpepper, finely chopped
4 tbsp finely chopped fresh coriander leaves
1 1/2 tsp salt
1 tsp ground caraway seeds
1 tsp oregano
1/2 tsp ground pepper
2 tbsp lemon juice
3 tbsp olive oil
3 cups croutons
Methods:
1. In a saucepan, place the chick peas with their
water and bring to a boil,
then cover and cook over medium
heat for 2 hours.
2. Add the remaining ingredients, except the
lemon juice, olive oil and croutons,
then cook over medium heat
for a further 30 minutes or until the chick peas
are well cooked.
3. Remove from the heat and stir in the lemon
juice and olive oil, then serve with
the croutons.
