Fried Vegetable Dish ( ShakShuka)

4 tbsp olive oil
1 large green pepper, seeds removed and finely chopped
6 medium sized onions, finely chopped
6 medium sized tomatoes, cut cube
1 small hot bellpepper, finely chopped
4 cloves garlic, crushed
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ground caraway seeds
1/2 tsp cumin
6 eggs

Methods;

1. In a frying pan, heat the oil, then add all the ingredients except the eggs.
2. Cover and cook for 15 - 25 minutes over medium heat, stirring once in a 
    while, then break the eggs over the top.
3. Recover and cook over low heat for a further 10 minutes, then serve while hot.
