Here are some of the character classes I have made with the "give him the info" (make your own class) option. Feel free to try them out for yourself.

Freelance Salesman:
Race: Imperial
Specialization: Stealth
Favorite Attributes: Personality, Speed

Minor Skills: Armorer, Hand-to-hand, Acrobatics, Light Armor, Sneak
Birthsign: The Lady
Description:This character, as his name implies, excels at trade and is gifted with persuasion skills. He prefers a blunt weapon over a blade, and is a confident fist fighter. In order to improve his appearance, he wears the best and fanciest clothing, hence the Unarmored skill. Also, he is an adept thief, picking locks and sneaking around if needed.

Hunter:
Race: Argonian
Specialization: Combat
Favorite Atributes: Endurance, Agility
Major Skills: Medium Armor, Spear, Alchemy, Marksman, Restoration
Minor Skills: Arcrobatics, Athletics, Sneak, Heavy Armor, Armorer
Birthsign: The Steed
Description:This character was born on the fringes of the Black Marsh, making him an exceptional hunter, both of his prey and of his enemies (which usually includes the Imperial Empire). All of the skills that a hunter or squatter might need he has perfected through a lifetime of hardship.

Description:This character is an intellectual at heart, a healer,mage, and monk. He travels all of Tamriel to learn of its peoples, religions, and lore. A spear can act as a staff for him in his journeys, but can also be a deadly weapon of self-defense. He must be hardy to survive harsh conditions of the wild, so skill in athletics is important as well.

A helpful word of advice:
I found that the easiest (and most fun) characters to play were those with a high Personality rating and good Speechcraft skill. This will greatly help you in the game because you will find that interacting and persuading characters to do what you want them to do will be so much easier. As a barbarian-type class, you may have to kill to get your way, but with a bit of Speechcraft, you can flatter your way into getting whatever you want; information, lower prices, or even essential quest items. High personality will automatically heighten others' disposition towards you when you speak to them, thus making it even easier to get what you need without lethal force or criminal actions.
