The Gundam Upgrades
The five original Gundams all recieved upgrades in one manner or another.  There has been somewhat of a consistency between the upgrades.  The Gundam Wing upgrades added to the Gundams, making them better and more versatile.  The Endless Waltz upgrades took much away from the Gundams, stripping them down to the essence of each one and bringing them to the extremes.
The Four Gundams and Their Successors
Wing has always been an exception to the rule, thus it will be covered under another heading.
Gundam Deathscythe
It is well known that the Deathscythe is the fastest of the original five Gundams.  Here is the Deathscythe's ability levels.

The upgrade to the Deathscythe Hell added a few things, namely a twin beam scythe and an active cloak.  The machine cannons were removed.

Fighting 150 - This was increased due to the effectiveness of the twin beam scythe.

Weapons 120 - Unchanged, due to the removal of the machine cannons and the addition of a twin beam scythe.

Speed 170 - This is where you'll notice a trend.  All the Gundams' (minus the Wing) main attribute was raised 10 points.  Sometimes it makes sense, but in this case, it doesn't.  Nothing explains the increase to speed.  In fact, the Deathscythe Hell is heavier and should move slower.  But this is an official number and there is no debating it.

Power 120 - Unchanged, nothing was added to require more power.  Beam blades do not weigh anything.

Armor 140 - This 20 point increase is due to the addition of the active cloak.  The active cloak also adds to the 0.2 ton increase.

Gundam Heavyarms
The Heavyarms has the highest weapons abilities of the original five Gundams.  Listed are the Heavyarms ability levels.

The Heavyarms Kai added a dual beam gatling to the Heavyarms arsenal.  Please note that the Heavyarms Kai's ability levels were never released*.

Fighting 110 - Unchanged, nothing was added to modify this.

Weapons 170 - This is from the addition of the twin beam gatling and to stay consistent ith the other Gundams.  The added barrel and ammunition would add to the large weight difference between the Heavyarms and Heavyarms Kai.

Speed 130 - Since the Heavyarms needed to be upgraded for battle in space, the extra thrusters needed to maneuver would add to speed, thus the 20 point increase.

Power 150 - The twin beam gatling would add more weight to the Heavyarms Kai's arm from the added barrel and ammunition.  Larger, more powerful actuators would be needed to lift this extra weight.  The power increase is also explained through the weight difference between the Heavyarms and Heavyarms Kai.

Armor 140 - Unchanged, although it is possible that armor increased the weight difference and armor should be given the additional 10 points, rmoving them from power.

Gundam Sandrock
The Sandrock is the heaviest armored of all the Gundams.  These are the Sandrock's ability levels.

The Sandrock Kai added a beam machinegun.  Note that the Sandrock Kai's ability levels were never released*.

Fighting 120 - Unchanged, nothing was added to change fighting ability.

Weapons 130 - The addition of the beam machinegun adds to the Sandrock Kai's weapon ability.

Speed 130 - Much like the Heavyarms, the Sandrock neede to be upgraded for space battle, and 20 points were allocated, and also to stay consistent.

Power 150 - Unchanged, the beam machinegun could easily be handled with 150 power.

Armor 170 - Increased 10 points to stay consistent with every Gundams' main ability being increased.  This increase can also be seen in the weight difference between the Sandrock and Sandrock Kai.  The beam machinegun could not take up all this weight by itself.

Gundam Shenlong
The Shenlong is the best fighter of the group.  Here are the Shenlong's ability levels.

The Altron added an additional dragon fang with two flamethrowers, and twin beam cannons.  The beam glaive was upgraded to a twin beam trident.

Fighting 170 - This 10 point increase is due to the additional dragon fang, and the beam blade at the end of the Altron's staff.

Weapons 140 - The twin beam cannons and the two flamethrowers upped the Altron's weapons 30 points.

Speed 130 - Unchanged, nothing was added to change the Altron's speed.

Power 140 - Unchanged, nothing that heavy was added that required more power.

Armor 120 - Unchanged, no armor was added to the Altron.

Overview
It is official data that the four Gundams had 660 total abilities.  It is also official data that the Deathscythe Hell and Altron had 700 total abilities.  Since I wanted the data to stay consistent, and it made no sense that one Gundam would end up more powerful than the next, I decided to have the Heavyarms Kai and Sandrock Kai end up with 700 points.  As I allocated points, everything seemed to fall into correct order, and I believe that I am as close to the actual values as possible.
* - The Heavyarms Kai and Sandrock Kai's ability levels actually were released in the book, History of Mobile Suit Gundam Chronicles 1979-1999The Mecha Domain uses these numbers.  Here is what The Mecha Domain has listed.

Doesn't make much sense, does it?  Why would the Heavyarms Kai recieve 10 points to fighting?  And the Sandrock Kai's beam machinegun added nothing to weapons?  And we also have 3 Gundams with their main abilities at 170, and the Sandrock Kai stays at 160?

I think you can see why I decided to use my own values.  It is far more consistent.
The Wing and Wing Zero
The Wing was the well-rounded Gundam of the original five.  It followed no pattern and excelled in everything.  Listed here is the Wing's ability levels.

The Wing was 10 points ahead of the other Gundams.  The Wing Zero added the Zero System, and the twin buster rifle.  The vulcans were modified to wing vulcans.

Fighting 150 - No explanation.  Nothing was added to increase fighting, let alone increase it 20 points.  How much output can you possibly add to a beam saber?  May be a result of the power ability increase.

Weapons 150 - The twin buster rifle would these 10 points, as well as add much more weight to the Wing Zero.

Speed 160 - The more powerful wing engines would add to these 10 points.

Power 140 - Most likely added so the Wing Zero could slash harder with its beam sabers, thus doing more damage and increasing the fighting potential.

Armor 140 - The Wing Zero weight significantly more than the Wing.  This weight difference is most likely added armor.

Total 740

The Wing Zero is 40 points ahead of the other four Gundams.  Everything got at least a 10 point increase.  Weapons makes sense, as does speed.  I made a correlation between the power and the fighting abilities, as they both got a 20 point increase.  Armor can be explained through the large weight difference.
The Endless Waltz Upgrades
As stated before, the Endless Waltz mecha didn't improve anything.  They actually subtracted all excess equipment and each Gundam became an ultimate of itself.
The Four Gundam Customs
The Wing Zero Custom is once again an exception and will be explained under another heading.
Gundam Deathscythe Hell Custom
The Deathscythe Hell is still the fastest of the five Gundams.  Here are the Deathscythe Hell's ability levels.

The Deathscythe Hell Custom removed the twin beam scythe and the buster shield.  It added however the beam scissors.

Fighting 150 - The removal of the twin beam scythe, but the addition of the beam scissors keeps fighting at 150.

Weapons 110 - The removal of the buster shield lowers weapons to 110.

Speed 190 - The speed was raised 20 points to stay consistent with the other Gundams, which will be seen later.

Power 120 - Unchanged, nothing was added to change power.

Armor 150 - The additiion of the larger active cloak and a small shield on each forearm added 10 points to armor.

Gundam Heavyarms Kai Custom
The Heavyarms Kai has the greatest weapons ability of the Gundams.  Listed is the Heavyarms Kai's ability levels.

The Heavyarms Kai Custom removed only the army knife, changed the dual beam gatling to two dual gatling guns, added two more chest gatlings, and many more homing and micro missiles.  Note that beam projectiles have a significantly higher velocity than ballistic projectiles.

Fighting 110 - Unchanged, the loss of the army knife was minor.

Weapons 190 - The change of the dual beam gatling to the two dual gatling gun would keep long-range firepower the same, and the added two chest gatlings, 30 homing missiles, and 28 micro missiles would add at least 20 more points to weapons, and it would also stay consistent with the other Gundams.

Speed 130 - Unchanged, nothing was added to increase speed.

Power 150 - Unchanged, nothing was added to require more strength.  Note that the 150 power added to Heavyarms Kai would be placed equally in both arms, not just one.

Armor 140 - Unchanged, no new armor was added to the Heavyarms Kai Custom.

Gundam Sandrock Kai Custom
The Sandrock Kai has the most amount of armor out of all the Gundams.  These are the Sandrock Kai's ability levels.

The Sandrock Kai Custom removed a shield, cross crusher, homing missiles, shield flasher, and beam machinegun.  However, the optional shoulder armor was added.  A shield does come with the 1/144th scale model kit, but it was never seen in Endless Waltz and thus will not be counted.

Fighting 130 - The heat shorters were made much longer and larger than the originals, thus the 10 point increase.

Weapons 110 - The loss of the two homing missiles and the beam machinegun lowered weapons 20 points due to the Sandrock Kai Custom's lack of powerful long-range weaponry.  The shield flashers were non-offensive equipment, and the cross crusher was a combined optional weapon, so their loss will not lower the weapons ability.

Speed 130 - Unchanged, nothing was added to increase speed.

Power 160 - The larger and heavier heat shorters would require more power to handle efficiently, so 10 more points to power would be needed.

Armor 190 - The added optional shoulder armor and loss of most weapons and shield but still maintaining the same weight as Sandrock Kai suggest added armor, plus the 190 points is consistent with the other Gundams.

Gundam Altron Custom
The Altron has the highest fighting ability of the other four Gundams.  Here are the Altron's ability levels.

The Altron Custom removed the twin beam cannons and four flamethrowers.  Nothing was added to the Altron Custom.

Fighting 190 - The longer range and flexibility of the new dragon fangs added 10 points each to fighting, for a total of 20 points.

Weapons 110 - The loss of the quad flamethrowers and dual beam cannons lowered weapons down 20 points.

Speed 150 - Given how the Altron was able to keep up with the Wing Zero Custom in Endless Waltz, and that the Altron Custom has the 3rd highest thruster weight and 2nd lightest base weight, the speed was increased 20 points.

Power 140 - Unchanged, nothing was added to require more power.

Armor 130 - Each dragon fang can function as a shield, so 10 points to armor was allocated.

Overview
I was originally going to have the Endless Waltz mecha replace the Gundam Wing upgrades in a sort of alternative future setting, thus having each Endless Waltz Gundam at 700 total ability points.  It made sense due to how each Gundam lost quite a bit of weaponry and gained very little.  The allocation of points of the Endless Waltz Gundams would be different from the Gundam Wing upgraded Gundams, but the total would be the same.

Then I realized that the Heavyarms Kai Custom didn't lose anything, and it didn't make any sense how the Heavyarms Kai and Heavyarms Kai Custom could both have 170 weapons when the latter had twice as many weapons as the former.  I assumed that if the Heavyarms Kai never existed and the Heavyarms was upgraded straight to the Heavyarms Kai Custom, then the 20 points to speed would still be needed and I couldn't allocate them to weapons to compensate and make everything equal to 700 total ability points I had planned earlier.

Thus I treated the Endless Waltz Mecha as customized upgrades rather than equipment changes.  It wasn't as large an upgrade as the Gundam Wing upgrades, but every Gundam still benefitted from it in the end.

As I added and subtracted points from each Gundam, I noticed that 3 out of 4 Gundams were at 720 points (the Altron Custom was less).  I took into account base weights and thruster weights, and I managed to even every Gundam out at 720 points.

I also noticed that 2 out of 4 Gundams' main abilities were at 190 points (the Deathscythe Hell Custom was more and the Sandrock Kai Custom was less).  Keeping in mind the consistency of the Gundam Wing upgrades, I reallocated some points and I managed to keep all the main abilities at 190 points.

All this is completely unofficial.  The Endless Waltz ability levels were never released in any book that I know of.  I gave the best attempt to standardize the Gundams as much as possible.
The Wing Zero Custom
Much like the Wing and Wing Zero, the Wing Zero Custom follows no pattern and excels in everything.  Here are the Wing Zero's ability levels.

The Wing Zero is 40 points ahead of the other Gundams.  The Wing Zero Custom removed the wing vulcans and the shield.  Nothing was added.

Fighting 160 - Increased 10 points with no explanation.  Possibly a result of the power increase.

Weapons 150 - Unchanged, the removal of the wing vulcans was minor.

Speed 175 - The addition of the four, very large "wings" would add to the Wing Zero Custom's speed.

Power 150 - The strength needed to use these wings would raise power at least 10 points.  Also may increase fighting due to stronger close-combat attacks.

Armor 140 - Unchanged, the removal of the shield and the addition of the wings keep armor at the same level.

Total 775

The Gundam Wing upgrades increased abilties 40 points.  The Endless Waltz upgrades increased abilities 20 points.  The Wing Zero was 70 points higher than Wing.  To stay consistent, the Wing Zero Custom is 35 points higher than Wing Zero.  Wing Zero increased every ability.  Wing Zero Custom increased half of the abilities (actually 2.5, rounded up to 3). 

The speed increase is valid, and the correlation between fighting and power is consistent with the Wing Zero as well.  Everything else is unchanged.

The Wing Zero Custom is rather vague, but the Wing Zero itself was vague, and its abilities are official where as the Wing Zero Custom is completely theorized.
