This is a family favorite and oh, so easy to prepare. I stock up on canned mushrooms each time they're on sale, so there's always a ready supply when someone has a hankerin' for the 'shrooms.
Mock Mushrooms
1 pkg. saltines, coarsely crushed
1 can cream of mushroom soup (undiluted)
2 beaten eggsMix all ingredients together. Drop from tablespoon into melted butter in non-stick coated skillet, spreading a tad to form patties. Brown on both sides over medium-high heat.
