Buckwheat-Oat Pancakes (From Arrowhead Mills Buckwheat Flour Package)

1 cup oatmeal
1/2 cup buckwheat flour
1/4 tsp. salt (optional)
1 tsp. baking powder
1 1/4 cups water
1 tbsp. vegetable oil
2 tsp. honey

  • Place oatmeal in blender. Grind into coarse flour.
  • Add remaining ingredients. Blend well. Let batter sit 2 minutes to thicken. Blend again for 2 seconds.
  • Pour onto hot oiled griddle or hot oiled waffle iron.
  • Bake on both sides until lightly browned.
  • Makes 8 to 10 medium pancakes or 2 large waffles.
