Tofu Satay

This recipe is from my very favorite vegetarian cookbook
    The Ultimate Vegetarian Cookbook by Roz Denny

Ingredients


Serves 4-6
2x7oz packages smoked (if you
can get it), extra firm tofu
3 Tbsp light soy sauce
2 tsp toasted sesame oil
1 garlic clove crushed
8-12 fresh bay leaves
sunflower oil, for grilling
Sauce
2 scallions, finely chopped
2 garlic cloves, crushed
good pinch chili powder
or few drops hot chili sauce
1 tsp granulated sugar
1 Tbsp white vinegar
2 Tbsp light soy sauce
3 Tbsp crunchy peanut but

Directions

1. Soak 8-12 wooden satay
    sticks in water for 20
    minutes, then drain.
    Cut tofu into bite size
    pieces and mix with the
    soy sauce, sesame oil
    and garlic.  Cover and
    let marinate for about
    20 minutes.

Beat the sauce ingred.
    together until well
    blended.  Avoid using
    a food processor for
    this as the texture
    should be slightly
    chunky.

3. Drain the tofu and thread
    the cubes onto the soaked
    satay sticks with pepper
    squares and bay leaves.
    Larger leaves may need
    to be halved.

4. Heat a broiler or
  barbecue until quite hot. 
  Brush or spray satays
  with oil. Broil, turning
  the sticks occasionally,
  until the ingredients are
  browned and crisp.  Serve
  hot with the dipping sauce.
