Bran Muffins
1 c. boiling water
1 c. Kellogg's All Bran
1 1/2 c. sugar
1/2 c. shortening
2 eggs
2 1/2 c. flour
1/2 tsp. salt
2 c. buttermilk
2 1/2 tsp. baking soda
2 c. Raisin Bran
Pour boiling water over All Bran, and let it sit until slightly cool. Meanwhile, cream sugar and shortening. Add the eggs one at a time. Add the flour, salt, and buttermilk mixed with soda. Mix well. Add the All Bran and Raisin Bran. Store batter in the refrigerator; it may be kept for several days.
Dip the batter from container without stirring. Drop into well-greased muffin tins. Bake at 400º for 20 minutes. Nuts and more raisins may be
added, if desired.
