Jenn's Famous Chicken Enchiladas

12 flour tortillas
16 oz. Monterey Jack cheese, grated
4-5 c. cooked diced chicken
3/4 c. chopped onion

Sauce
1/2 c. butter
1/2 c. flour
4 c. chicken broth
2 c. sour cream
4 oz. can chopped green chiles

Place 2 tablespoons cheese, 1 1/2 tablespoons chicken adn 1 tablespoon onion in each tortilla. Roll up and place seam side down in a 9x13 pan.

Melt butter in a saucepan until it bubbles. Add flour and stir well to make a roux. As soon as flour is blended completely, add broth. Cook, stirring constantly until mixture thickens and bubbles. Stir in sour cream and peppers. Cook until heated through but do not boil. Pour over tortillas. 

Bake at 350º for 30 minutes. Sprinkle remaining cheese on top and cook five minutes more, or until cheese melts. 

Serves 6.
