Herb Cheese Bread

1 c. milk
1/3 c. butter
2 Tbls. sugar or honey
1 1/2 tsp. salt
1 large egg
1 cake yeast
1/2 c. lukewarm water
1/2 c. grated Parmesan or Romano cheese
1/2 tsp. dried oregano
1/4 tsp. dried marjoram or sweet basil
4 1/2 c. sifted flour

Scald milk. Add butter, honey or sugar, and salt. Stir to melt/dissolve. Cool to lukewarm; add egg and beat. Dissolve the yeast in lukewarm water. Add yeast mixture to milk mixture, and stir to blend. Stir in cheese, herbs, and 2 c. flour. Beat until smooth. Add remaining flour and work it in with hands. Knead until smooth and elastic, 5-7 minutes.

Place in buttered bowl, brush with melted butter or oil, cover, and let rise in a warm place until doubled, about an hour. Knead again for several minutes, let rest, covered, for 10 minutes. Shape into loaves, place in buttered pans, and let rise until doubled, about 45 minutes. Bake in 400 degree oven for 45-50 minutes, or until done.
