Dry or Canned?

If you use canned beans as a subsitute for dry beans, use three 14oz cans for every 1 lb of beans.

Soaking

You do not need to soak lentils or split peas.  Rinse all other types of beans in a strainer with cold water, then cover with 3-4X thier total volume in water (6 cups for every 1 lb of beans).  You can either soak them in the fridge overnight, or bring the water to a boil, let simmer 10 minutes, then cover and soak on the stove-top for 2 hours.

blacks beans, kidneys, peanuts, black-eyed pease, pintos, and soy beans.
2 hours stovetop, 20-25 minutes in pressure cooker.
Mung beans, small red beans
3 hours stovetop, 30-35 minutes in pressure cooker.
Garbanzos (aka chick peas, ceci beans)
4 hours stovetop, 40-45 minutes in pressure cooker.
Lentils and split peas
1 hour stovetop, 10-15 minutes in pressure cooker.
