Marmalade Boy Cookies
(yields about 48 2-inch cookies)

This recipe makes a chewy and pleasantly tart cookie.
 

Preheat oven to 375 degrees.

You will need:
1/3 cup butter
2/3 cup sugar
1 egg
1 & 1/2 cups all-purpose flour
1 & 1/4 teaspoons baking powder
and, of course...
6 tablespoons of orange marmalade!
 

In a bowl, beat the butter until it is soft, then gradually add the sugar. Blend until light and creamy. Then beat in the egg and the marmalade. Next stir in the flour and baking powder.
Drop the batter from a teaspoon onto a greased cookie sheet (make sure to separate them far enough apart).
Bake the cookies for about 8 minutes.
Since most marmalades are different and each has it's own consistency, it's hard to tell how much flour you should really add. It's a good idea to just start out by making 1 or 2 cookies. If they are too dry, add a little more marmalade to the batter, if they are too moist add just a little more flour.

(If you want to try it, you can also add a little grated lemon rind to the batter. I didn't put that in the recipe because I wanted to keep the ingredients simple, and I don't often go around grating fresh lemons...)
