Fresh Apple Cake/Bread

Ingredients:

6 small-medium apples (3-4 large) - peeled and cut (I used MacIntosh)
2 cups sugar
3 cups flour
1 tsp nutmeg
1 tsp Allspice
2 tsp cinnamon
1 tsp salt
2 tsp baking soda
1 cup vegetable oil
1 cup raisins
2 eggs; lightly whipped
1 cup chopped nuts (I used between a 1/2 cup and 3/4 cup walnuts)

Directions:

  1. In bowl cover apples with sugar. Let stand 10 minutes.
  2. In separate bowl Sift together flour, nutmeg, Allspice, cinnamon, salt, baking soda.
  3. Blend vegetable oil, raisins, eggs, chopped nuts with sugared apples.
  4. Add flour mixture to apple mixture and mix lightly until all ingredients are wet.
  5. Pour into greased 13x9x3 pan or loaf pans (smaller pans seem to cook better) Bake at 325 for 50 minutes or until toothpick comes out clean. Optional topping: Let cool and sprinkle sugar on top.
