Fresh Apple Cake/Bread
Ingredients:
6 small-medium apples (3-4 large) - peeled and cut (I used MacIntosh)
2 cups sugar
3 cups flour
1 tsp nutmeg
1 tsp Allspice
2 tsp cinnamon
1 tsp salt
2 tsp baking soda
1 cup vegetable oil
1 cup raisins
2 eggs; lightly whipped
1 cup chopped nuts (I used between a 1/2 cup and 3/4 cup walnuts)
Directions:
- In bowl cover apples with sugar. Let stand 10 minutes.
- In separate bowl Sift together flour, nutmeg, Allspice, cinnamon, salt, baking soda.
- Blend vegetable oil, raisins, eggs, chopped nuts with sugared apples.
- Add flour mixture to apple mixture and mix lightly until all ingredients are wet.
- Pour into greased 13x9x3 pan or loaf pans (smaller pans seem to cook better) Bake at 325 for 50 minutes or until toothpick comes out clean.
Optional topping: Let cool and sprinkle sugar on top.
