Asian Coleslaw

Ingredients:

1/2 c. sugar
1/3 c. vinegar
16 oz. pre-packaged cole slaw
2 pkg. Ramen noodles (any flavor, including vegetarian, works well!)
3 chopped green onions
1 c. slivered almonds; toasted
1 c. sunflower seeds
1 c. vegetable oil (I thought this was too much and will probably use 1/2 to 2/3 next time I make)

Directions:

  1. Dissolve sugar in vinegar. This can take about 15-20 minutes.
  2. Add oil and flavor packets from noodles.
  3. Mix all well and set aside.
  4. Break up noodles, uncooked, into pieces and add to cole slaw and rest of ingredients.
  5. Mix all together. Refigerate overnight so noodles get soft. Keeps for a couple of days in the refrigerator.
