North Carolina Pork Barbecue

Ingredients:

1 (3 - 4 LB) pork loin roast
1 Tablespoon salt
Coarsely ground black pepper
2 Tablespoons sugar
2 Cups cider vinegar
1/4 - 1/2 Cup tomato catsup
Toasted hamburger bun halves

Directions:

  1. Cut off as much fat as possible from roast; sprinkle all surfaces with salt and pepper.
  2. Place meat in Slow Cooker.
  3. Sprinkle with sugar; pour in vinegar. Cover.
  4. Turn heat control to LOW; cook about 12 hours or until meat falls off bones (we use boneless pork loin roast).
  5. Place meat in bowl, remove bones and excess fat.
  6. Shred meat with fork.
  7. Stir in just enough drippings from Slow Cooker and catsup to moisten meat. Serve on toasted hamburger buns and top with hot sauce and coleslaw.

Makes 8 sandwiches.
