North Carolina Pork Barbecue
Ingredients:
1 (3 - 4 LB) pork loin roast
1 Tablespoon salt
Coarsely ground black pepper
2 Tablespoons sugar
2 Cups cider vinegar
1/4 - 1/2 Cup tomato catsup
Toasted hamburger bun halves
Directions:
- Cut off as much fat as possible from roast; sprinkle all surfaces with salt and pepper.
- Place meat in Slow Cooker.
- Sprinkle with sugar; pour in vinegar. Cover.
- Turn heat control to LOW; cook about 12 hours or until meat falls off bones (we use boneless pork loin roast).
- Place meat in bowl, remove bones and excess fat.
- Shred meat with fork.
- Stir in just enough drippings from Slow Cooker and catsup to moisten meat. Serve on toasted hamburger buns and top with hot sauce and coleslaw.
Makes 8 sandwiches.
