Granny Pearl Pound Cake
This recipe came from my Great Grandmother, Pearl Pierce. Everytime I  saw her she always had a fresh pound cake waiting to be eaten! I remember one Christmas she gave her famous cakes as presents....18 of them, in fact!  Once you make this cake, you'll see that this is quite a feat indeed.  I hope you'll make this cake and enjoy it as much as she did! 
Ingredients
6 eggs
3 cups sugar
3 cups plain All purpose flour
1 cup Crisco
1 cup sour cream
1 stick butter
1/4 teaspoon soda
1/4 teaspoon salt
1 tablespoon pure Vanilla extract
1/2 to 1 tablespoon lemon flavoring.
Preparation
Preheat Oven to 300.  Cut wax paper to fit bottom of tube pan. Grease and flour well.  Sit aside.

Measure 3 cups of flour and sift one time.  Measure 3 cups in sifter and add salt and soda.  Sift again. (this is very important and must not be skipped)

In mixing bowl cream butter and Crisco, beating continuosly.  Add sugar followed by sour cream until well blended.  Add eggs 2 at a time with 1/3 portion of flour, blending well after each addition. Add flavorings. Blend until smooth.

Bake in oven for approximately 1 hour.  Time will vary in your oven; this cake has been known to take up to 1 hour and 20 minutes to bake fully.


Variations: This cake can also be made with coconut.  Simply add coconut flavoring in place of lemon to the traditional recipe and add as much frozen coconut to recipe as you like.

I have also found that this cake can be made in small mini-bundt pans and make wonderful single serving cakes.  These pans can be found at any baker's supply store or even at your local grocery store.  I have found that a cooking spray with Flour added works well in these pans, thereby eliminating the need for wax paper.
